Start by prepping the fresh tomatoes. Bring a large pot of water to boil, score an 'X' on the bottom of each tomato, and blanch them in the boiling water for 30 seconds. Immediately transfer the tomatoes to an ice water bath. Peel off the skins and roughly chop. Set aside.
