Preheat your oven to 400Β°F (200Β°C).
Lay out 4 large sheets of heavy-duty aluminum foil, each about 18 inches long.
Place a chicken breast in the center of each foil sheet.
In a large mixing bowl, combine sliced mushrooms, zucchini rounds, cherry tomatoes, olive oil, minced garlic, dried oregano, dried thyme, paprika, salt, and black pepper. Toss well to coat the vegetables evenly.
Divide the vegetable mixture evenly among the four foil packs, arranging them around and on top of the chicken breasts.
Top each chicken breast with a slice or two of lemon.
Fold the sides of the foil over the chicken and vegetables, sealing the edges tightly and creating a packet. Make sure there's some space inside the packets for air to circulate.
