Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.
In a medium-sized skillet, heat the olive oil over medium heat. Add the minced garlic and chopped green onions, and sauté for 2-3 minutes until fragrant.
Add the chopped spinach to the skillet and cook for another 2-3 minutes, or until the spinach is wilted. Remove from heat and let the mixture cool slightly.
In a mixing bowl, combine the cream cheese, feta cheese, sautéed spinach mixture, salt, and black pepper. Mix well until fully combined.
Melt the unsalted butter in a small saucepan or microwave-safe dish.
Lay out one sheet of filo pastry on a clean surface and brush it lightly with the melted butter. Place another filo sheet on top and brush it with butter as well. Repeat until you have three layers of filo pastry.
Cut the layered filo pastry into four equal strips lengthwise.
Place a small spoonful of the filling about 2 cm from the bottom edge of one strip. Fold the bottom corner of the filo over the filling to form a triangle. Continue folding the triangle up the length of the strip, retaining the triangular shape.
Repeat the process with the remaining filo sheets and filling.
Place the filled triangles on the prepared baking sheet and brush the tops lightly with melted butter.
Bake in the preheated oven for 12-15 minutes, or until the filo pastry is golden brown and crisp.
Let the hors d'oeuvres cool slightly before serving. Enjoy them warm or at room temperature!
