Preheat your oven to 180°C (356°F) and line a baking tray with parchment paper.
Finely chop the onion and garlic. Roughly chop the spinach and dill.
Heat the olive oil in a skillet over medium heat. Add the onion and sauté until translucent, about 3-4 minutes. Add the garlic and cook for another minute.
Stir in the spinach and cook until wilted, about 2-3 minutes. Remove from heat, drain any excess moisture, and allow to cool slightly.
In a mixing bowl, crumble the feta cheese. Add the cooled spinach mixture, dill, egg, salt, and black pepper. Stir until well combined.
Melt the unsalted butter in a small saucepan or microwave.
Take one filo sheet and place it on a clean surface. Brush it lightly with melted butter, then fold it in half lengthwise to make a long strip.
Place about 1 tablespoon of the filling at one end of the filo strip. Fold the corner of the strip over the filling to create a triangle. Continue folding the strip in a triangular pattern until you reach the end. Repeat with the remaining filo sheets and filling.
