📝 Instructions

11 steps
1

Rinse the scallops under cold water and pat them dry with paper towels. Remove the side muscle if still attached.

2

Season the scallops with 1/2 tsp of salt, 1/4 tsp of black pepper, and 1 tsp of chili powder. Set aside.

3

Heat 2 tbsp of olive oil in a large skillet over medium-high heat until shimmering.

4

Sear the scallops in the skillet for 2-3 minutes on each side until golden brown and slightly opaque in the center. Remove from the skillet and set aside on a plate.

5

In the same skillet, lower the heat to medium and add the remaining 1 tbsp of olive oil and 2 tbsp of butter.

6

Add the minced garlic to the skillet and sauté for 30 seconds, or until fragrant.

7

Stir in the diced red bell pepper, yellow bell pepper, red onion, jalapeño, and corn kernels. Cook for 4-5 minutes until the vegetables are tender but still vibrant.

8

Season the vegetables with the remaining 1/2 tsp of salt, 1/4 tsp of black pepper, and 1/2 tsp of smoked paprika. Stir well.

9

Add the fresh lime juice and chopped cilantro to the vegetable mixture. Toss to combine and cook for another minute.

10

Return the seared scallops to the skillet and spoon some of the vegetable mixture over them. Let everything warm through for 1-2 minutes.

11

Serve the Fiesta Style Scallops warm, optionally garnished with sliced avocado and lime wedges on the side.
