  • 2 tbsp olive oil
  • 300 g Italian sausage (casings removed)
  • 3 count garlic cloves, minced
  • 250 g cherry tomatoes, halved
  • 2 tbsp tomato paste
  • 200 ml heavy cream
  • 50 g Parmesan cheese, grated
  • 10 g fresh basil leaves, chopped
  • 1 to taste salt
  • 1 to taste black pepper

In a large pot, bring salted water to a boil. Cook the farfalle pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

While the pasta cooks, heat the olive oil in a large skillet over medium heat.

Add the Italian sausage to the skillet and break it up with a wooden spoon. Cook for 5–7 minutes or until browned and cooked through.

Add the minced garlic to the skillet and sauté for 1 minute until fragrant.

Stir in the cherry tomatoes and cook for 3–4 minutes, allowing them to soften and release their juices.

Add the tomato paste to the skillet and mix well to coat the sausage and tomatoes.
