Preheat the oven to 375Β°F (190Β°C) and line a baking sheet with parchment paper.

Season the chicken breasts with salt and black pepper on both sides. Heat olive oil in a skillet over medium heat and sear the chicken breasts for 2-3 minutes per side until golden brown. Remove from heat and let cool slightly.

Carefully place the wrapped chicken parcels seam-side down on the prepared baking sheet.

In a small bowl, whisk together the egg yolk and water. Brush this egg wash over the top of each phyllo-wrapped chicken parcel to help them brown beautifully.

Bake in the preheated oven for 25-30 minutes, or until the phyllo is golden and crisp, and the chicken is cooked through (internal temperature of 165Β°F or 74Β°C).
