Pour the whole milk into a large saucepan and place it over medium heat.
Heat the milk until it starts to gently simmer and reaches a temperature of about 85°C (185°F). Stir occasionally to prevent it from scorching.
Remove the saucepan from heat and allow the milk to cool to around 43°C (110°F). This is warm enough to activate the yogurt cultures but not so hot that it kills them.
In a small bowl, whisk the plain yogurt until smooth. Add a few tablespoons of the cooled milk to the yogurt and mix well to temper it.
Gently stir the tempered yogurt mixture into the rest of the cooled milk until fully combined.
Pour the mixture into a large bowl or container, cover it with a lid or clean kitchen towel, and wrap it with a kitchen towel to retain warmth.
Place the container in a warm, draft-free spot (such as inside an oven with just the light on or in a turned-off microwave) and let it sit undisturbed for 6-8 hours or overnight until the yogurt thickens.
Once the yogurt has set, transfer it to the refrigerator to chill before serving.
