Separate the egg yolks from the whites, placing the yolks in a medium-sized mixing bowl. Save the egg whites for another recipe (they wonβt be used in this one).
Whisk the egg yolks until they are smooth and slightly pale. Gradually add the granulated sugar substitute, whisking until it is fully incorporated and the mixture is creamy.
In a medium saucepan, combine the milk, heavy cream, ground nutmeg, and ground cinnamon. Place the pan over medium heat, stirring constantly, until the mixture begins to steam but does not boil.
