Preheat your oven to 180°C (350°F) or 160°C (320°F) for fan-assisted ovens. Line a 2lb loaf tin with baking parchment or lightly grease it.
Steep the Darjeeling tea leaves in 250ml of boiling water for 5 minutes. Strain the tea and discard the leaves. Pour the hot tea over the dried cranberries in a bowl and let them soak for 15 minutes to plump up.
In a large mixing bowl, sift the self-raising flour and ground ginger together. Stir in the caster sugar and fresh orange zest.
In a separate bowl, lightly beat the eggs until frothy. Add the soaked cranberries along with any remaining tea liquid, and mix well.
Pour the wet mixture into the bowl of dry ingredients. Stir gently until just combined—avoid overmixing to keep the loaf light.
