πŸ“ Instructions

12 steps
1

Preheat your oven to 180Β°C (350Β°F) and lightly grease a 12-cup muffin tin.

2

Prepare the orange jelly by dissolving the 135 grams of orange jelly in 150 milliliters of boiling water. Stir well to ensure it is fully dissolved.

3

Pour the jelly into a shallow container and mix in the zest of one orange. Place in the refrigerator to set while preparing other components.

4

In a mixing bowl, crack two large eggs and add 50 grams of caster sugar.

5

Whisk the eggs and sugar together for about 5 minutes, or until the mixture becomes pale and thickened.

6

Sift 50 grams of self-raising flour over the egg mixture and gently fold in using a spatula, trying to retain as much air as possible.

7

Spoon the batter into the greased muffin tin, filling each cup about halfway.

8

Bake in the preheated oven for 7-10 minutes, or until the sponge is risen and lightly golden. Remove from the oven and let them cool in the tin.

9

Once the jelly is set, use a small round cutter slightly smaller than the sponge bases to cut out discs of jelly.

10

Melt 100 grams of dark chocolate gently over a pot of simmering water or in the microwave in short bursts. Stir until smooth.

11

Place a jelly disc on each cooled sponge base, then carefully spoon or drizzle melted dark chocolate over each jaffa cake, covering the jelly completely.

12

Let the chocolate set at room temperature or in the fridge before serving. Enjoy your homemade jaffa cakes!
