📝 Instructions

12 steps
1

Preheat your oven to 170°C (340°F). Grease a 6-hole muffin tin or line it with paper cases.

2

In a large mixing bowl, cream the butter and caster sugar together until light and fluffy.

3

Add the eggs, one at a time, beating well after each addition.

4

Sift the self-raising flour into the bowl, then fold in gently using a spatula or wooden spoon.

5

Add the almond meal, orange zest, orange juice, and milk, and mix until just combined.

6

Divide the batter evenly among the prepared muffin holes, filling each about two-thirds full.

7

Bake in the preheated oven for 20-25 minutes, or until a skewer inserted into the center of a cake comes out clean.

8

While the cakes are baking, prepare the orange syrup. In a small saucepan, combine the orange juice and caster sugar. Heat over medium heat, stirring until the sugar dissolves. Allow the mixture to simmer gently for 3-4 minutes, then set aside to cool slightly.

9

Once the cakes are done, remove them from the oven and let them cool in the tin for 5 minutes.

10

Using a skewer, poke small holes into the top of each cake while they are still warm.

11

Spoon the orange syrup over the cakes, allowing it to soak into the holes. Use all the syrup for maximum flavor.

12

Transfer the cakes to a wire rack to cool completely before serving. Enjoy your zesty, syrupy treats!
