Gather all your ingredients and equipment: a Vietnamese coffee filter (also called a phin), a heatproof glass, and a spoon.

Place the phin coffee filter over the heatproof glass and add 2 tablespoons of medium-ground dark roast coffee to the filter chamber. Gently press the coffee grounds with the filter’s gravity press to level them, but don’t pack them too tightly.

Pour a small amount of boiling water (about 2 tablespoons) into the filter to bloom the coffee grounds. Let it sit for 30 seconds to bring out the robust flavors.

Slowly pour the remaining boiling water (3/4 cup) into the coffee filter. Cover the filter with its lid and allow the coffee to drip through. This should take about 4-5 minutes. If it drips too fast, press the grounds more firmly; if it drips too slowly, loosen the press slightly.
