Season the beef chuck roast generously on all sides with salt, black pepper, and thyme.

Peel and thinly slice the yellow onion. Peel and cut the carrots into large chunks. Cut the red potatoes in half or quarters if they are large. Mince the garlic cloves.

Heat a large skillet over medium-high heat and add the vegetable oil. Sear the roast on all sides until it is browned, about 2-3 minutes per side. Remove the roast from the skillet.
