Discover the comforting charm of Croatian Flour Noodles, also known as Mlinci—a traditional dish that brings rustic homemade flavors to your table. This recipe combines simple pantry staples like all-purpose flour, eggs, and a pinch of salt to create tender, golden sheets of baked noodles. The dough is effortlessly kneaded, rolled thin, and lightly baked until crisp, then softened to al dente perfection in boiling water. Traditionally served as a side dish, these noodles are often paired with roasted meat and drizzled with savory pan drippings or melted butter, making them the perfect addition to a hearty Sunday dinner. With a total prep and cook time under an hour, this versatile recipe is an easy way to experience the essence of Croatian cuisine in your own kitchen.
In a large mixing bowl, combine the all-purpose flour and salt.
Create a well in the center of the flour mixture and crack the egg into it.
Gradually add the water to the mixture while stirring with a wooden spoon until the dough begins to come together.
Transfer the dough to a floured surface and knead for about 8–10 minutes until it becomes smooth and elastic.
Wrap the dough in plastic wrap and let it rest for 20 minutes at room temperature.
Preheat your oven to 200°C (400°F).
Divide the dough into 4 equal portions and roll each one out into thin sheets around 2 mm thick.
Cut the dough into rough rectangular pieces, about 10 cm by 15 cm.
Place the noodles onto baking sheets lined with parchment paper ensuring they do not overlap.
Bake the noodles in the preheated oven for 6–8 minutes per side, or until they become slightly golden and crisp. Flip the noodles halfway through baking.
Once baked, allow the noodles to cool completely.
To prepare the Mlinci for serving, break the baked noodles into smaller pieces.
Bring a large pot of salted water to a boil and add the noodle pieces. Let them cook for only 1–2 minutes, or until softened but still slightly al dente. Drain well.
Optionally, drizzle the cooked noodles with pan drippings from roasted meat or toss them with butter before serving. Enjoy as a side dish accompanying your favorite roast.
