Bring the water to a rolling boil over medium-high heat. Once boiling, cover the pot, remove it from the heat, and let the eggs sit for 10-12 minutes.
Drain the hot water and transfer the eggs into a bowl of ice water to cool for at least 5 minutes.
Carefully peel the eggs and slice them in half lengthwise. Remove the yolks and place them in a medium mixing bowl. Set the egg whites aside.
