πŸ“ Instructions

11 steps
1

Rinse the corned beef silverside under cold water to remove any excess brine. Pat dry with paper towels.

2

Place the corned beef in a large pot or Dutch oven.

3

Add the water to the pot, ensuring that the meat is fully submerged. If necessary, add more water.

4

Add the brown sugar, apple cider vinegar, peppercorns, bay leaves, and mustard seeds to the pot.

5

Peel the onion and garlic cloves. Cut the onion into quarters and lightly crush the garlic cloves. Add both to the pot.

6

Peel and chop the carrots and celery into large chunks, then add them to the pot as well.

7

Bring the pot to a gentle boil over medium heat, then reduce the heat to low and cover with a lid.

8

Simmer the corned beef for 2.5 to 3 hours, or until it is tender and easily pierced with a fork. Skim any foam that appears on the surface as it cooks.

9

If adding potatoes and cabbage, peel and quarter the potatoes and cut the cabbage into wedges. Add them to the pot during the last 30 minutes of cooking.

10

Once the meat is cooked, carefully remove it from the pot and allow it to rest for 10 minutes before slicing against the grain.

11

Serve the sliced corned beef with the cooked vegetables and some of the flavorful cooking broth ladled over the top.
