Preheat your oven to 325°F (165°C).

Place the ham in a large roasting pan, fat-side up. Score the surface of the ham in a crisscross pattern with shallow cuts about 1/2 inch deep.

In a medium saucepan, combine the brewed coffee, brown sugar, honey, Dijon mustard, apple cider vinegar, ground cloves, and black pepper. Heat over medium heat, stirring frequently, until the mixture is smooth and slightly thickened, about 5 minutes.

Brush about 1/3 of the coffee glaze all over the ham, ensuring it gets into the scored cuts. Cover the ham loosely with aluminum foil to prevent over-browning.
