In a medium saucepan, combine 360ml of brewed coffee and granulated sugar. Stir over medium heat until the sugar is fully dissolved. Remove from heat.

In a small bowl, add 2 packets of unflavored gelatin to 120ml of hot water. Stir until completely dissolved.

Pour the dissolved gelatin mixture into the coffee and sugar mixture. Stir well to combine.

Pour the coffee mixture into a square or rectangular dish (preferably a glass baking dish) to create a shallow layer, about 1 inch thick. Set aside to cool to room temperature before refrigerating.
