Preheat your oven to 200Β°C (400Β°F).
Cut the chicken breast into bite-sized chunks and season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
Peel and dice the potatoes and carrots into small cubes. Steam or boil the potatoes, carrots, and broccoli florets for 5-7 minutes until slightly tender. Set aside.
