📝 Instructions

8 steps
1

Heat a medium-sized skillet over medium heat. Remove the casing from the chorizo sausage (if necessary) and cook it in the skillet, breaking it apart with a wooden spoon until fully cooked and browned, about 5-7 minutes.

2

Transfer the cooked chorizo to a plate lined with paper towels to drain any excess grease. Set aside.

3

Wipe the skillet clean and place it back on medium heat. Add a small portion of butter (about 1/2 tablespoon) and let it melt to coat the pan.

4

Lay one flour tortilla flat in the skillet. Sprinkle 1/2 cup of shredded cheese evenly over one half of the tortilla.

5

Add approximately 2 ounces of the cooked chorizo over the cheese, spreading it out evenly. Fold the other half of the tortilla over to create a half-moon shape, pressing lightly to seal.

6

Cook the quesadilla for 2-3 minutes on one side until golden brown and crispy. Carefully flip it over and cook for another 2-3 minutes until the other side is golden and the cheese is melted.

7

Remove the quesadilla from the skillet and keep warm. Repeat this process with the remaining tortillas, cheese, and chorizo.

8

Slice each quesadilla into thirds or quarters and serve warm, garnished with fresh cilantro if desired. Offer sour cream and salsa on the side for dipping.
