1. Remove the casing from the chorizo sausage, if applicable. Heat a large skillet over medium heat and cook the chorizo until it is browned and fully cooked, breaking it into small crumbles with a spatula. Remove the cooked chorizo from the skillet and set it aside on a plate lined with paper towels to drain any excess grease.

2. Wipe out the skillet with a paper towel to remove excess grease, then return it to medium heat.

3. Spread 1/2 tablespoon of butter on one side of a tortilla. Place the tortilla buttered-side down in the skillet.

4. Evenly sprinkle 50 grams of shredded cheese over one half of the tortilla. Add a portion of the cooked chorizo on top of the cheese, along with optional ingredients such as black beans, jalapeños, or cilantro, if desired. Sprinkle an additional 50 grams of shredded cheese over the toppings.
