📝 Instructions

8 steps
1

In a large mixing bowl, combine the ground pork, chipotle chili powder, garlic powder, onion powder, salt, and black pepper. Mix gently until evenly combined, being careful not to overwork the meat.

2

Divide the pork mixture into four equal portions and shape each into a patty about 3/4-inch thick. Make a slight indentation in the center of each patty with your thumb to prevent them from puffing up while cooking.

3

Heat a large skillet or grill pan over medium-high heat and add the vegetable oil. Once hot, cook the pork patties for 4-5 minutes on one side without moving them to create a nice sear.

4

Flip the patties and cook for another 4-5 minutes, or until they reach an internal temperature of 160°F (71°C). During the last minute of cooking, top each patty with a slice of cheddar cheese and cover the pan to let the cheese melt.

5

While the patties are cooking, prepare the chipotle mayo by mixing the mayonnaise and chipotle in adobo sauce in a small bowl. Adjust the amount of chipotle sauce to taste if you prefer it more or less spicy.

6

Toast the hamburger buns in a toaster, on a grill, or in a dry skillet until lightly golden.

7

Assemble the burgers: Spread a generous amount of chipotle mayo on the bottom half of each bun. Layer with a lettuce leaf, a slice of tomato, and a slice of red onion. Place the cheesy pork patty on top and add pickle slices. Finish with the top half of the bun.

8

Serve immediately with your favorite side dishes, such as fries or a fresh salad. Enjoy!
