Preheat your oven to 350°F (175°C).
Bring a large pot of water to a boil. Add the chicken breasts, and cook for 15-20 minutes until fully cooked. Remove the chicken from the pot, let it cool slightly, and shred it using two forks.
While the chicken cooks, wash and slice the yellow squash into thin rounds. Dice the onion into small pieces.
In a large skillet, melt 2 tablespoons of butter over medium heat. Sauté the yellow squash and onion for 5-7 minutes until softened. Remove from heat and set aside.
In a large mixing bowl, combine the cream of chicken soup, sour cream, salt, black pepper, garlic powder, and 1 cup of the cheddar cheese. Stir well until smooth.
Add the shredded chicken and sautéed squash and onion to the bowl. Mix until everything is evenly coated.
