Bring a large pot of salted water to a boil over medium-high heat, and cook the penne pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain and set the pasta aside.

While the pasta cooks, dice the chicken breasts and chorizo sausage into bite-size pieces. Finely chop the garlic cloves and red onion. Finely chop the parsley for garnish and grate the Parmesan cheese.

Return the cooked chicken and chorizo to the skillet, mixing them into the sauce. If the sauce seems too thick, gradually add small amounts of reserved pasta water until it reaches your desired consistency.

Add the cooked penne pasta to the skillet, tossing to coat the pasta evenly in the sauce. Let everything heat through for 2 minutes.
