Preheat your oven to 375°F (190°C). Grease a 9x13-inch casserole dish and set aside.
Heat the olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 6–8 minutes on each side, or until fully cooked. Remove from the skillet, let the chicken cool slightly, then shred it using two forks.
In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Remove from heat.
In a large mixing bowl, combine the cream of chicken soup, sour cream, 1.5 cups of shredded cheddar cheese, cooked garlic, salt, and black pepper. Stir until well mixed.
Add in the shredded chicken, frozen mixed vegetables, and cooked rice to the bowl. Fold everything together until well combined.
Transfer the mixture to the prepared casserole dish and spread it out evenly.
