Preheat a panini press or large skillet over medium heat.
Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes. Drain on a paper towel-lined plate.
While the bacon cooks, wash and core the Granny Smith apple. Thinly slice it into rounds or half-moons, about 1/8 inch thick.
Butter one side of each slice of sourdough bread. Spread honey mustard on the opposite side of each slice.
Assemble each panini by layering 1 slice of cheddar cheese, 2 strips of cooked bacon, a layer of apple slices, and another slice of cheddar cheese on the mustard side of the bread. Top with another slice of bread, butter side facing out.
Place the assembled sandwiches in the panini press or skillet. If using a skillet, press down on the sandwich with a heavy pan or spatula. Cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
Slice the panini in half and serve warm. Enjoy!
