Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes. Transfer the bacon to a paper towel-lined plate to drain excess grease.
While the bacon cools, thinly slice the apple into even rounds or half-moons, depending on your preference. Discard the core and seeds.
Lay out the bread slices and spread 1/2 tablespoon of Dijon mustard on one side of each slice.
Place 1 slice of cheese on top of the mustard-coated side of 2 of the bread slices. Add 2 slices of cooked bacon and a layer of apple slices, then top with another slice of cheese. Finish by placing the remaining bread slices mustard-side down on top to form the sandwiches.
