Bring a medium pot of water to a boil. Add the peeled and chopped carrots, and cook for 15 minutes or until they are fork-tender. Drain the water completely.
Transfer the cooked carrots to a food processor or blender. Puree the carrots until smooth. Allow the mixture to cool slightly before proceeding.
In a large mixing bowl, whisk together the eggs, granulated sugar, milk, melted butter, all-purpose flour, baking powder, and salt until well combined.
