  • 2 tablespoons Taco seasoning
  • 1 cup Black beans, drained and rinsed
  • 1 cup Cooked white or brown rice
  • 1 cup Salsa
  • 2 cups Shredded cheddar or Mexican cheese blend
  • 1 cup Corn kernels (fresh, canned, or frozen)
  • 0.5 cup Sour cream
  • 1 cup Chopped tomatoes
  • 0.25 cup Chopped cilantro (optional, for garnish)

Preheat oven to 375°F (190°C). Grease a 9-inch round baking dish or deep pie pan.

Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a wooden spoon. Drain excess fat if necessary.

Stir in the taco seasoning and 1/4 cup of water. Cook for 2-3 minutes, allowing the flavors to combine. Remove from heat.

Spread a thin layer of salsa (about 2 tablespoons) on the bottom of the prepared baking dish.

Place one tortilla in the dish, pressing it down to form the base of the stack.

Spread 1/4 of the ground beef mixture over the tortilla. Top with a layer of black beans, a layer of rice, a few spoonfuls of corn, and a sprinkle of cheese. Add a drizzle of salsa on top.

Repeat the layering process (tortilla, beef, beans, rice, corn, cheese, salsa) until you have used up all the ingredients, finishing with a tortilla on top.

Spread the sour cream evenly over the top tortilla. Sprinkle the remaining cheese over the sour cream.

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
