Built with layers of tender flour tortillas, perfectly seasoned ground beef or turkey, hearty black beans, fluffy rice, sweet corn, and zesty salsa, all topped with gooey melted cheese and a tangy spread of sour cream, this dish is as showstopping as it is simple to make. Ready in just 40 minutes, it’s ideal for feeding a crowd or creating leftovers the whole family will love. Preheat oven to 375°F (190°C). Grease a 9-inch round baking dish or deep pie pan.
Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a wooden spoon. Drain excess fat if necessary.
Stir in the taco seasoning and 1/4 cup of water. Cook for 2-3 minutes, allowing the flavors to combine. Remove from heat.
Spread a thin layer of salsa (about 2 tablespoons) on the bottom of the prepared baking dish.
Place one tortilla in the dish, pressing it down to form the base of the stack.
Spread 1/4 of the ground beef mixture over the tortilla. Top with a layer of black beans, a layer of rice, a few spoonfuls of corn, and a sprinkle of cheese. Add a drizzle of salsa on top.
Repeat the layering process (tortilla, beef, beans, rice, corn, cheese, salsa) until you have used up all the ingredients, finishing with a tortilla on top.
Spread the sour cream evenly over the top tortilla. Sprinkle the remaining cheese over the sour cream.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Remove from oven and let cool for 5 minutes. Garnish with chopped tomatoes and cilantro, if desired.
