Ingredients

  • 1 cup Black beans (canned, drained and rinsed)
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1.5 cups Shredded cheddar cheese
  • 4 large Flour tortillas
  • 1 cup Fresh corn kernels (from 1 cob or frozen and thawed)
  • 0.5 cup Cherry tomatoes (diced)
  • 0.25 cup Red onion (finely diced)
  • 2 tablespoons Fresh cilantro (chopped)
  • 1 whole Lime (juiced)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Vegetable oil
  • 0.5 cup Sour cream (optional, for serving)
  • 1 teaspoon Hot sauce (optional, for serving)

Directions

Step 1

In a medium bowl, mash the black beans with a fork or potato masher until partially smooth. Stir in the ground cumin and chili powder.

Step 2

To make the corn salsa, combine the corn kernels, cherry tomatoes, red onion, cilantro, lime juice, salt, and black pepper in a separate bowl. Mix well and set aside.

Step 3

Place a large skillet over medium heat and add 1 tablespoon of vegetable oil. Once heated, lay one tortilla flat in the skillet.

Step 4

Spread 1/4 of the mashed black bean mixture evenly over half of the tortilla. Sprinkle 1/4 of the shredded cheddar cheese on top of the beans.

Step 5

Fold the tortilla in half, pressing gently to seal. Cook for 2-3 minutes on each side or until golden and crispy, and the cheese is melted.

Step 6

Remove the cooked quesadilla from the skillet and repeat the process with the remaining tortillas, adding more oil to the skillet as needed.

Step 7

Cut each quesadilla into wedges and serve warm with the corn salsa on the side.

Step 8

Optionally, serve with sour cream and hot sauce for added flavor.
