This recipe highlights simple yet sophisticated ingredients like honey, Dijon mustard, and high-quality olive oil to create a perfectly balanced vinaigrette thatβs both creamy and zesty. With its easy blend-and-drizzle preparation, this versatile dressing pairs beautifully with crisp greens, roasted vegetables, or even as a marinade for proteins. Ready in under 45 minutes, including roasting time, this make-ahead vinaigrette will quickly become your go-to for adding gourmet flair to any meal.
Preheat the oven to 400Β°F (200Β°C).
Slice off the top of the garlic bulb, exposing the tops of the cloves. Drizzle 1 tablespoon of olive oil over the garlic and wrap it in aluminum foil.
Roast the garlic in the preheated oven for 35-40 minutes, or until the cloves are soft and golden brown. Let it cool to room temperature.
Squeeze the roasted garlic cloves out of their skins into a blender or food processor.
Add the balsamic vinegar, honey, Dijon mustard, salt, and black pepper to the blender.
Blend the mixture while slowly drizzling in the remaining 5 tablespoons of olive oil until the vinaigrette is smooth and emulsified.
If the vinaigrette is too thick, add 1 tablespoon of water and blend again to reach your desired consistency.
Taste and adjust seasoning with additional salt or pepper, if needed.
Transfer the vinaigrette to a jar or airtight container and store in the refrigerator for up to 1 week. Shake well before each use.
