Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Thaw the puff pastry sheet according to the package instructions. Once thawed, unfold and cut into 6 equal squares or rectangles. Transfer the pieces to the prepared baking sheet and set aside.
In a medium skillet, heat 1 tablespoon of butter and the olive oil over medium heat.
Thinly slice the onions and add them to the skillet. Cook for 10-12 minutes, stirring occasionally, until they become soft and begin to caramelize.
Stir in the balsamic vinegar and brown sugar. Cook for an additional 2-3 minutes until the mixture is sticky and glossy. Remove the onions from the pan and set them aside.
Thinly slice the mushrooms and mince the garlic.
In the same skillet, melt the remaining 1 tablespoon of butter. Add the garlic and sauté for 1 minute until fragrant.
Add the mushrooms and cook for 5-7 minutes until tender and any liquid released has evaporated. Stir in the fresh thyme, salt, and black pepper. Remove mushrooms from heat.
Use a sharp knife to score a ½-inch border around the edges of each puff pastry square. Be careful not to cut all the way through. Prick the center of each square several times with a fork.
Divide the caramelized onions and mushrooms evenly among the squares, spreading them within the scored borders.
Top each tart with blue cheese crumbles, distributing evenly.
In a small bowl, whisk together the egg and water to make an egg wash. Brush the edges of the pastry with the egg wash to promote golden-brown crisping.
Bake the tarts in the preheated oven for 20-25 minutes or until the pastry is puffed and golden.
Remove from the oven and allow tarts to cool slightly before serving. Garnish with additional thyme if desired.
