📝 Instructions

10 steps
1

Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.

2

Lightly flour a clean work surface and roll out the puff pastry to a thickness of about 3mm. If using pre-rolled puff pastry, simply unroll it.

3

In a medium bowl, crumble the Stilton cheese into small pieces. Chop the walnuts finely and add them to the bowl along with the fresh thyme leaves. Mix well to combine.

4

Cut the puff pastry into equal-sized squares, approximately 10cm x 10cm.

5

Place a spoonful of the Stilton mixture in the center of each pastry square. Be careful not to overfill.

6

Fold each square diagonally to create triangles, pressing the edges together firmly to seal. Use the tines of a fork to crimp the edges for added security and decoration.

7

In a small bowl, beat the egg to make an egg wash. Brush the tops of the pastries with the beaten egg for a golden finish.

8

Transfer the pastries to the prepared baking tray, spacing them out evenly to allow for expansion.

9

Bake in the preheated oven for 18–20 minutes, or until the pastries are puffed and golden brown.

10

Allow the pastries to cool slightly on a wire rack before serving. Serve warm or at room temperature for the best flavor.
