Start by preparing your ingredients: Wash and dry the apples thoroughly. Core and dice the apples into small 1/4-inch pieces; set aside.
In a large, non-stick skillet, melt 4 tablespoons of unsalted butter over medium heat.
Add the diced apples to the skillet and cook for 2-3 minutes until they begin to soften.
Stir in the brown sugar, honey, ground cinnamon, and salt, and cook for an additional 2 minutes until the mixture is bubbling and caramelized.
Remove the skillet from heat and stir in the vanilla extract. Allow the apple mixture to cool slightly.
In a large mixing bowl, combine the crispy rice cereal and mini marshmallows.
