Ingredients

  • 500 grams fresh salmon fillet (skinless)
  • 60 grams panko breadcrumbs
  • 1 large egg
  • 2 green onion (finely chopped)
  • 2 tablespoons dill (fresh, finely chopped)
  • 1 teaspoon lemon zest
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 4 burger buns
  • 4 lettuce leaves
  • 1 large tomato (sliced)
  • 120 grams plain Greek yogurt
  • 1 tablespoon dill (fresh, finely chopped for sauce)
  • 1 tablespoon lemon juice
  • 0.25 teaspoon salt (for sauce)

Directions

Step 1

Prepare the salmon by finely chopping it or pulsing it a few times in a food processor until it has a coarse ground texture. Do not overprocess; you want some texture to remain.

Step 2

In a large mixing bowl, combine the chopped salmon, panko breadcrumbs, egg, green onion, dill, lemon zest, salt, and black pepper. Mix gently until well combined.

Step 3

Divide the mixture into 4 equal portions and shape into burger patties. Place the patties on a plate and refrigerate for 10-15 minutes to help them firm up.

Step 4

While the patties are chilling, make the dill yogurt sauce by mixing the Greek yogurt, dill, lemon juice, and salt in a small bowl. Set aside.

Step 5

Heat the vegetable oil in a large skillet over medium heat. Once the oil is hot, add the salmon patties and cook for about 3-4 minutes per side, or until golden brown and cooked through.

Step 6

Toast the burger buns lightly in the same skillet or in a toaster.

Step 7

To assemble the burgers, spread a generous dollop of dill yogurt sauce on the bottom half of each bun. Add a lettuce leaf, a cooked salmon patty, and tomato slices. Top with the other half of the bun.

Step 8

Serve immediately with your favorite side dish, such as sweet potato fries or a fresh salad.
