1. Line a loaf pan with plastic wrap, leaving enough overhang on the sides to cover the top of the log later.

2. Take your first pint of slightly softened ice cream and spread an even layer (about 1 inch thick) into the bottom of the pan using a spatula.

3. Place a layer of cookies on top of the ice cream, cutting them as needed to fit snugly.

4. Repeat the process by alternating layers of different ice cream flavors and cookies until the pan is full. Leave about 1/2 inch of space at the top of the pan for expansion when freezing.
