Line an 8x8-inch baking pan with parchment paper, ensuring there is some overhang on the sides for easy removal later.
In a saucepan over low heat, combine the honey and peanut butter. Stir gently until melted and fully mixed. Remove from heat and stir in the vanilla extract.
In a large mixing bowl, combine the granola or cereal with the honey-peanut butter mixture. Mix thoroughly until all the cereal is evenly coated.
Transfer half of the cereal mixture into the prepared baking pan. Use a spatula or the back of a spoon to press it down into an even, compact layer.
In a medium bowl, mix the Greek yogurt with half of the fruit and chopped nuts (if using). Spread the yogurt mixture evenly on top of the first cereal layer in the pan.
Add the remaining cereal mixture on top of the yogurt layer. Press it down gently but firmly to form the final layer.
Sprinkle the remaining fruit and nuts (if desired) on top for added decoration.
Cover the pan tightly with plastic wrap or aluminum foil and place it in the freezer for at least 2-3 hours or until fully set.
Once set, remove the pan from the freezer and use the parchment paper overhang to lift the bars out. Place the block on a cutting board and cut into 12 bars with a sharp knife.
Store the bars in an airtight container in the refrigerator for up to 5 days or in the freezer for up to 1 month.
