Rinse the yellow split peas thoroughly under cold water and set aside.
Heat the olive oil in a large soup pot over medium heat.
Add the diced onion, carrot, and celery to the pot. Sauté for 5-7 minutes, or until the vegetables are softened.
Stir in the minced garlic and cook for another minute until fragrant.
Add the ham bone or smoked ham hock to the pot, followed by the rinsed split peas, chicken broth, bay leaf, and thyme.
Increase the heat to high and bring the soup to a boil. Reduce the heat to low and let the soup simmer uncovered for 60-75 minutes, or until the split peas are tender and the soup has thickened.
Remove the ham bone or ham hock from the soup and let it cool slightly. Shred any remaining ham off the bone and add it back to the soup along with the diced cooked ham.
Season the soup with salt and black pepper to taste.
