Transport yourself to New England with this traditional Yankee Brown Bread, a hearty and wholesome recipe steeped in history. Made with a unique trio of cornmeal, rye flour, and whole wheat flour, this dense and slightly sweet bread gets its rich flavor from molasses and optional bursts of sweetness from raisins. Steamed to perfection in a cylindrical can, this no-oven-required method ensures a moist, tender crumb every time. Perfectly paired with butter or cream cheese, or served alongside comforting favorites like baked beans, this versatile bread is a timeless classic. With just 15 minutes of prep time and a bit of patience while it steams, Yankee Brown Bread is a satisfying addition to any meal or a wonderful stand-alone snack.
In a large mixing bowl, whisk together the cornmeal, rye flour, whole wheat flour, baking soda, and salt until well combined.
Add the buttermilk and molasses to the dry ingredients and stir until just blended. If using raisins, fold them in gently at this stage.
Grease the inside of a 1-quart cylindrical metal coffee can or similar heat-safe container with butter or vegetable oil.
Pour the batter into the prepared container, filling it no more than 2/3 full to allow room for the bread to rise.
Cover the top of the container tightly with aluminum foil to prevent water from seeping in during the steaming process.
Place a large pot on the stovetop and set a steaming rack or an upside-down small heatproof dish in the bottom.
Add enough water to the pot to reach just below the steaming rack or dish, then bring the water to a gentle boil.
Carefully place the covered container with the batter onto the steaming rack or dish inside the pot.
Cover the pot with its lid and lower the heat to maintain a steady simmer. Steam the bread for 2 hours, checking occasionally to ensure the water level does not drop too low. Add more boiling water as needed to maintain the water level.
After 2 hours, check the bread by inserting a skewer or toothpick into the center. If it comes out clean, the bread is done.
Remove the container from the pot and let it cool for 10 minutes. Carefully run a knife around the edges of the bread and gently slide it out onto a wire rack to cool completely.
Slice and serve warm or at room temperature. Enjoy your Yankee Brown Bread with butter, cream cheese, or as a side to savory dishes like baked beans.
