Preheat the oven to 375°F (190°C).
In a small bowl, mix together the chili powder, garlic powder, onion powder, cumin, salt, and black pepper.
Rub the chicken breasts with half of the olive oil and season evenly with the spice mixture.
In a large skillet, heat the remaining olive oil over medium heat. Add the chicken and cook for 5-7 minutes on each side or until fully cooked and no longer pink in the middle.
Remove the chicken from the skillet and let it rest for a few minutes before slicing it thinly.
In the same skillet, add the bell pepper and red onion. Sauté for 5 minutes or until they're softened and slightly charred.
Lay out two coconut wraps and evenly distribute the sliced chicken, sautéed vegetables, and avocado over them.
Place another coconut wrap on top of each to form quesadillas.
Transfer the quesadillas onto a baking sheet and bake in the preheated oven for 10 minutes, until the wraps are slightly crisp.
Remove from the oven, cut into wedges, and sprinkle with fresh cilantro.
Serve warm with lime wedges on the side.
