In a large mixing bowl, combine the all-purpose flour and salt.
Make a well in the center of the flour mixture and add the egg and water. Mix until a shaggy dough forms.
Turn the dough onto a floured surface and knead for 8-10 minutes until smooth and elastic. Cover the dough with a damp towel and let it rest for 30 minutes.
While the dough rests, prepare the filling. In a bowl, mix the cottage cheese, egg yolk, and sugar until well combined.
Once the dough has rested, roll it out on a floured surface to about 1/8-inch thickness.
Use a 3-inch round cutter (a glass works well) to cut circles out of the dough.
Place approximately 1 teaspoon of the cottage cheese filling in the center of each circle.
Fold the dough over the filling to create a half-moon shape and pinch the edges firmly to seal. Repeat with remaining dough and filling.
Bring a large pot of salted water to a boil. Drop the dumplings in batches into the boiling water and cook for about 3-5 minutes, or until they float to the surface.
Remove the cooked wareneki with a slotted spoon and transfer to a serving dish. Melt the butter and pour it over the dumplings to prevent sticking.
