  • 100 ml Heavy cream
  • 2 pieces Garlic cloves
  • 50 g Parmesan cheese, grated
  • 1 tsp Lemon zest
  • 2 tbsp Fresh parsley, chopped
  • 1 tsp Salt
  • 0.5 tsp Freshly ground black pepper
  • 2 liters Water for boiling pasta
  • 2 tbsp Salt for pasta water

Bring 2 liters of water to a boil in a large pot. Add 2 tablespoons of salt to the water.

Cook the spaghetti or linguine in the boiling water according to the package instructions, until al dente. Reserve 1/2 cup of pasta water before draining.

While the pasta cooks, toast the walnuts in a dry skillet over medium heat for 3-4 minutes, shaking occasionally, until aromatic. Remove from heat and set aside.

In the same skillet, heat 4 tablespoons of extra virgin olive oil over medium heat. Add the garlic cloves (minced or finely chopped) and sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
