Cook the rice vermicelli noodles according to the package instructions. Rinse with cold water and drain thoroughly. Set aside.

Prepare all the filling ingredients by julienning the carrot and cucumber, and rinsing the fresh herbs.

Fill a large bowl or shallow dish with warm water. Submerge a rice paper wrapper in the water for about 10 seconds, until it starts to soften. Remove and place it on a clean, flat work surface.
