📝 Instructions

11 steps
1

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente.

2

While the pasta is cooking, clean and slice the button mushrooms. Peel and finely mince the garlic cloves.

3

In a large skillet, heat the olive oil and butter over medium heat until the butter is melted and bubbling.

4

Add the minced garlic to the skillet and sauté for 1 minute or until fragrant.

5

Add the sliced mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until they are golden and softened.

6

Reduce the heat to low and stir in the double cream. Allow it to warm for a minute, then crumble the Stilton cheese into the mixture. Stir well until the cheese has melted and the sauce is smooth.

7

Season the sauce with salt and black pepper to taste. Be mindful with the salt as Stilton is naturally salty.

8

Once the spaghetti is cooked, drain it and reserve about 100ml of the pasta water.

9

Add the drained pasta to the skillet with the sauce, tossing to coat the spaghetti evenly. If the sauce appears too thick, add a splash of the reserved pasta water to loosen it.

10

Remove the skillet from the heat and sprinkle in the chopped fresh parsley. Toss again to distribute the parsley evenly.

11

Serve the Stilton Spaghetti with Mushrooms immediately, garnished with grated Parmesan cheese if desired.
