Whether youβre looking to explore the rich flavors of Indonesian cuisine or need a unique snack idea, Vegetarian Emping is a must-try!
Begin by washing the melinjo nuts thoroughly under running water to remove any dust and debris.
In a large pot, bring the 1000 ml of water to a boil. Add the melinjo nuts and allow them to boil for about 10 minutes, or until they become tender. Drain and let them cool slightly.
Once cool enough to handle, peel the outer skin of the melinjo nuts. Use a mortar and pestle or a sturdy surface to flatten each nut into thin, round chips.
Spread the flattened melinjo chips on a clean cloth or kitchen towel. Let them dry completely; this may take a few hours under the sun or you can use an oven at the lowest setting to speed up the drying process.
Heat the vegetable oil in a deep frying pan over medium heat. Once the oil is hot enough for frying, test by dropping a small piece of emping β if it sizzles, the oil is ready.
Carefully add a few emping pieces into the hot oil, making sure not to overcrowd the pan. Fry until they turn golden brown and crispy, approximately 1-2 minutes per batch.
Using a slotted spoon, remove the emping from the oil and place them onto a plate lined with paper towels to drain excess oil.
While still hot, sprinkle the fried emping with salt to taste. Adjust salt levels according to your preference.
Allow to cool completely before serving. Store any leftovers in an airtight container to maintain their crispness.
