In a large pot, heat the coconut oil over medium-high heat. Add vegan bacon and cook until crispy, about 5 minutes. Remove from pot and set aside.
In the same pot, add the diced onion, minced garlic, and chopped celery. SautΓ© until the onion becomes translucent, about 5 minutes.
Add the corn kernels, peeled and diced potatoes, and vegetable broth. Stir well and bring to a boil.
