Cook the udon noodles according to the package instructions. Drain, rinse under cold water, and set aside.
In a small bowl, whisk together soy sauce, hoisin sauce, sriracha, and sesame oil to make the sauce. Set aside.
Pat the shrimp dry with paper towels, then season with salt and black pepper on both sides.
