📝 Instructions

13 steps
1

Preheat your oven to 180°C (350°F).

2

Finely chop the onion, garlic, parsley, and mint leaves.

3

In a large bowl, mix the ground lamb, chopped onion, garlic, parsley, mint, paprika, cumin, salt, and black pepper until well combined.

4

Heat olive oil in a skillet over medium heat, and cook the meat mixture for about 5-7 minutes until the lamb is browned and the onions are soft. Let it cool slightly.

5

Lay a sheet of phyllo pastry on a clean working surface and brush it lightly with melted butter.

6

Place another phyllo sheet on top and brush it again with butter. Repeat until you have four sheets stacked up.

7

Spoon a quarter of the lamb filling along one short edge of the phyllo stack, leaving about 2 inches from the edge.

8

Fold the sides of the phyllo stack over the filling, then carefully roll it up to enclose the filling, brushing more butter as you roll to seal.

9

Repeat the process with the remaining four sheets and filling to create another roll.

10

Place the rolls seam-side down on a baking sheet lined with parchment paper.

11

Brush the tops with egg yolk and sprinkle with sesame seeds.

12

Bake in the preheated oven for 30-35 minutes, or until the pastry is golden brown and crispy.

13

Allow the rolls to cool slightly before slicing them into portions and serving.
