Preheat your oven to 350°F (175°C). Prepare a roasting pan with a rack.
Remove the giblets from the turkey and pat the turkey dry with paper towels.
Rub the entire turkey inside and out with olive oil, then season generously with salt and black pepper.
Stuff the cavity of the turkey with two oranges (quartered), the thyme sprigs, and one minced garlic clove.
In a small saucepan over medium heat, combine orange juice, orange zest, honey, soy sauce, and the remaining minced garlic. Bring to a simmer and stir until well combined. Remove from heat and set aside.
Brush the turkey with the melted butter and place it onto the roasting rack.
Pour 2 cups of chicken/turkey stock into the bottom of the roasting pan to prevent drippings from burning.
Roast the turkey in the preheated oven for 2.5 to 3 hours, or until an instant-read thermometer inserted into the thickest part of the thigh reads 165°F (74°C). Baste the turkey with the orange glaze every 30 minutes for a rich, caramelized flavor layer.
During the last 15 minutes of cooking, slice the remaining orange into thin rounds and arrange them on top of the turkey for a decorative touch.
Remove the turkey from the oven and let it rest for at least 20 minutes before carving. Serve the turkey alongside any leftover glaze as a sauce.
